Wash the apples, peel and remove the seed nests. Put the cut pieces in a saucepan, add 50 g of sugar, cinnamon and a little water. Cook for about 20 minutes over low heat until cooked. Then set aside, and when cooled, blitz to a smooth paste.
Put the egg yolks into a metal bowl, add 25 g of sugar to them and whisk over a pot of boiling water (steaming) until the mixture triples. Later, cool it down.
