Spring is in full swing, summer is around the corner, and soon the first crops will appear in gardens, including cucumbers. We suggest how to make delicious preserves from them

A classic of the genre, or small-salted

Who does not know them? They are banally simple and delicious. To make pickles you will need:

  • ground cucumbers (as small as possible),
  • horseradish,
  • dill,
  • garlic,
  • water,
  • salt (for every liter of water about 1.5 tablespoons of salt).

Cucumbers after washing should be put into jars of about a liter, add to them horseradish, dill and garlic. Then you need to boil the water with salt and such solution pour into jars with cucumbers and spices. So prepared jars must now be capped and turned upside down and left for at least 24 hours, after which time they can be put in the pantry

Sweet and Sour Cucumber Madness

Slightly more difficult but equally delicious as pickles can be sweet and sour salad of cucumbers, peppers and carrots. To make about 8 jars of this deliciousness, you need:

  • about 4 kg of cucumbers,
  • about ½ kg of red bell peppers,
  • about ½ kg of carrots,
  • about ½ kg of onions,
  • 2 tablespoons salt,
  • 1 cup oil,
  • 1 cup vinegar,
  • 1 cup sugar,
  • 1 teaspoon of pepper.

Cucumbers you need to wash, peel and cut into slices, do the same with onions. Put the cucumbers and onions into one pot, sprinkle with salt and set aside for a few hours. After that time drain the juice and add washed, peeled and sliced carrots and the same prepared peppers. Add diced garlic. In another bowl mix together oil, vinegar, sugar and pepper. Pour the marinade prepared this way into the vegetables and mix, set aside for a few hours, after this time the salad should be more crunchy. Now just put the salad into jars and screw tightly, then pasteurize for about 15 minutes. Turn the jars upside down later and leave to cool

Pickles for sandwiches

Another proposition is delicious, slightly spicy cucumbers in marinade, which will be perfect as an addition to sandwiches. To make them you will need:

  • approx. 1 kg of cucumbers,
  • approx. 6 glasses of water,
  • approx. 6 cups 10% vinegar,
  • 6 cups of sugar,
  • 1 tsp allspice,
  • ½ tsp colored peppercorns,
  • 1 tsp turmeric,
  • 1 tsp mild curry,
  • 1 tsp garlic flakes,
  • 4 tsp salt.

First you need to wash, peel and cut the cucumbers into even slices, then arrange the slices in the jars. The next step is to prepare the marinade: you just need to boil water with vinegar, sugar and other spices. Thus boiled solution you need to pour into jars, which should be immediately capped and put in a pot and pasteurize for about 10 minutes

With the addition of honey

A very interesting proposal is a delicious, crunchy cucumbers in honey marinade. The recipe is trivially easy to make. You will need:

  • approx. 2 kg of cucumbers,
  • 2 carrots,
  • 8 grains of allspice,
  • 4 bay leaves,
  • 2 onions,
  • 2 tablespoons of mustard seeds,
  • a piece of horseradish root,
  • a few sprigs of tarragon,
  • dill,
  • 4 cloves of garlic (optional),
  • 4 small chili peppers (optional),
  • 4 cups water,
  • 1 cup vinegar,
  • 2 cups sugar,
  • 2 tablespoons of honey,

The first step is to wash cucumbers and prepare jars, into which you put spices (allspice, bay leaf, tarragon, mustard, horseradish and dill and garlic). If you like spicier versions of dishes, you can add chili peppers. Then you need to add finely chopped onions and carrots to the spices. Finally, put the cucumbers into the jars. Now it’s time to prepare the marinade: add vinegar, salt, sugar and honey to water and boil. The amount of the latter you can freely dose according to your preferences. Pour the hot marinade to the vegetables and season in jars and pasteurize for 10-15 minutes

Tomato(l)ove

The last proposal is surprising – cucumbers in tomato marinade! Delicious and easy to make.

  • 2 kg of cucumbers,
  • 6 onions,
  • ½ cup vinegar,
  • ½ cup sugar,
  • ½ cup oil,
  • 2 Tbs Vegeta,
  • 6 or more tablespoons tomato puree, concentrate or passata,
  • ½ teaspoon salt.

You can peel the cucumbers or not, cut them into thin slices and place them in a dish together with the onion cut in any way you like, sprinkle the whole thing with salt. In another bowl mix vinegar, sugar, oil, Vegeta and tomato puree. Pour the mixture into the bowl with cucumbers and onions. Mix well and set aside for a few hours. After this time put into jars and pasteurize for about 15 minutes
