The base, or lentils
Lentils are an interesting ingredient for soups. It is also very healthy: it has large amounts of protein, potassium and folic acid. Lentils also have a very low glycemic index, so they can be successfully consumed by diabetics. Dietary properties of lentils should also appreciate those who care about dieting. This product is easily digestible and improves digestion, its caloric content is only 116 kcal per 100 grams
There are several varieties of lentils, including yellow, red, brown and green lentils. Each of them is suitable for different types of dishes. Brown lentils, because of their intense flavor, will be ideal for pâtés or lentil chops. With green lentils are usually made salads or dumplings. The most popular, however, is red lentils. This type of lentils, like yellow lentils, will be ideal for soups, but also for sauces, due to the fact that it does not require prior soaking and that it cooks nicely and is ideal for blending, for example when making cream soups.
Lentil soup recipe
Lentil soup is an interesting dinner option (also for vegetarians). Its simplicity means you can modify it any way you like and serve it with many different ingredients and variations. Preparing it will take you no more than 15 minutes! To prepare the simplest lentil soup you will need:
- 50 g of red lentils,
- 500 ml of chicken or vegetable stock,
- ½ onion,
- 2 cloves of garlic,
- 2 tbsp olive oil,
- spices as desired (it is worth adding a little hot pepper, it will enhance the flavor and color),
- ¼ cup of 30% cream,
- some chopped greens (parsley, basil, etc.).
Making lentil soup is very simple: first you need to heat olive oil in a pot and fry onion, then you need to chop garlic and add to the pan as well. Finally add dry lentils and spices and fry for a few more minutes. In the next step, pour in the broth and boil everything together for about 20 minutes, checking whether the lentils are already soft. When the lentils are soft, take the pot off the heat and stir in the cream and finally add the greens. Done!
Cheese croutons are a great addition to any soup. They are trivially easy to prepare and delicious in taste. To make them you will need:
- 1 grain or garlic bread roll,
- 1 tablespoon of butter,
- 1 clove of garlic,
- 2 spoonfuls of grated sharp yellow cheese (it is good that the cheese is more intense in taste, thanks to that it will enhance the taste of soup to which you will add croutons).
Cheese croutons, like lentil soup, are easy to make. All you need to do is melt butter in a pan, add chopped garlic (it’s good to remove the garlic after frying for a while, it’s just to give a taste). The next step is to dice the bun and throw it in the pan. Rolls should be fried until crispy and brown. At the very end add the yellow cheese, mix and fry for a while. You can add them to the soup straight from the pan. You can add any spices you like to croutons, you don’t have to add cheese if you don’t like it.

Alternative versions of lentil soup with cheese croutons
Lentil soup is so simple that you can modify the recipe as you like. Add for example tomatoes or zucchini or pumpkin or carrots. A delicious alternative to the traditional lentil soup can also be a cream soup. Just blend all the products together and you’re done. You can also experiment with spices and even cream, replacing it with coconut milk. It is worth remembering that lentil soup can be eaten by people on a vegetarian diet
